My passion for cooking started very early, in my mother's kitchen. This passion for mixing ingredients together brought me to study chemistry at the university. With this background, I continued my experiments in the kitchen. My diet slowly changed, I turned vegetarian and then vegan, looking for a more ethical way of living and better health.
As I grew up in a cheese-lover country, it was not an easy step to give up on cheese and let go of this distinct world of flavors, smells and textures. I tried to find substitutes and tested many recipes for vegan cheese I found online. But none of them brought me the satisfaction I was looking for... The taste was there but the texture, surely not!
Until I discovered that I could age cashew nuts in the same way as milk is aged in the process of cheese-making. I got fantastic results, results that amazed my family and friends.
Deli Devi, my boutique, vegan cheese and chocolate factory was then born in Koh Phangan, Thailand. It very quickly bloomed and became a spot where people can indulge without guilt.
Since opening the boutique, I continued to create new recipes for cheese, trying to reproduce the flavors I remembered and satisfy my cravings.
After countless requests from customers asking to learn the procedures to make cheese and craft chocolate bars, I started to offer fully-booked workshops in the kitchen of Deli Devi. Still receiving requests from customers who were back in their home country, I decided to share this precious knowledge online and reveal my secrets with you.
